Vegan Holiday Spice Cake Recipe

There's nothing like the holidays to get the home smelling yummy and to gather your friends and family around for good eats. If you have vegans among your holiday guests this spice cake is a crowd pleaser for them and all non-vegans alike. This Christmas spice cake recipe is as delicious to eat as it is to smell. So Christmas cooks, get baking!

What you'll need:


2 ½ cups whole wheat flour

1 ½ Cups sugar

2 tsp each – baking soda, cinnamon, cloves, and ginger

½ tsp salt

1 ½ Cups soymilk (like Silk brand)

6 T Light buttery spread (like Smart Balance)

1 Cup whole canned cranberry sauce

1 9" square pan

Powdered Sugar for Garnish

Combine the Soymilk and the melted buttery spread. Stir together all the dry ingredients: flour, sugar, baking soda, spices and salt.

Alternate adding the dry ingredients and cranberry sauce until everything is fully blended. Grease a 9 inch square pan with Smart Balance, a light Canola oil or light oil spray. Pour into the batter into the well-greased pan.

Bake on middle rack in preheated 350 degree oven for 60 minutes or until toothpick inserted in the center comes out clean. Garnish with powdered sugar (put into strainer, shake it over the entire cake).

Serve and enjoy with your favorite hot beverage.
